While a movie or show is playing, press Select and open the gear wheel (top-right) or three dots (bottom-left). For language, scroll to Audio Tracks and pick the option ending in "eng" (or another language). For subtitles, scroll to Subtitle Tracks and choose Disable or a language. Note: restarting a title resets the language to default.
